I did a lot of thinking about which recipe to go with for my first official recipe post on this site. After much consideration, I decided to start with the beginning – breakfast. Mornings around my house are hectic with four people trying to get out the door – especially when two of them have no sense of urgency. Enter this delicious banana blueberry oatmeal smoothie.
Parents out there – please tell me this same scene happens in your house daily. You’ve told your kids six times to put on their shoes. Comb their hair. Get their backpacks, lunchboxes, water bottles. Yet somehow there’s still no sense comprehension that it’s time to leave NOW. Finally, your voice raises and the kids look at you with no idea as to why mommy’s face is all red.
Sometime before I lose my mind, I like to make sure my kids have something healthy and delicious to fill their bellies. Many mornings, that means a smoothie. I love smoothies because you can pack a complete meal into one glass. We have some plastic cups with lids and straws for the smoothies so they can go in the car on the mornings the kids are really dragging their feet.
This particular smoothie was born two years ago when we were stuck in the house due to snow. (Yes, I live in the south. I was born in the Midwest but learned to drive in the South which basically means that I know enough to know that I don’t know. So I prefer to stay in my house until it melts.) We were low on groceries and I started experimenting in smoothie making using the fruit we had in the freezer. This delectable banana blueberry oatmeal smoothie was born.
This smoothie is so sweet and creamy that it’s almost like a blueberry milkshake. Another thing I love about this smoothie? It’s super easy. Throw all of the ingredients into the blender, turn it on, and voila! Breakfast is served for the whole family in under five minutes!
Or in this case, snack.
- ½ cup unsweetened vanilla almond milk
- 4 ounces of plain nonfat greek yogurt
- 1 cup frozen blueberries
- 1 frozen banana
- 1 teaspoon stevia
- ⅓ cup oatmeal
- Optional: blend with 1 cup of ice cubes.
- Add all of the following to a blender: almond milk, yogurt, blueberries, banana, stevia, and oatmeal. Blend until smooth.
- If you want your smoothie to be colder, add one cup of ice cubes. I tend to skip this step as I prefer the smoothie without ice chunks.
